This is a phenomenal soup that can be made in 30 minutes tops. I normally shy away from red cabbage but on an impulse bought it. Made Cabbage Curry and had some leftovers that I have put in the soup.I slurped every spoon of this yummy soup and went for a second helping. It was that good!

Ingredients:
- Chicken - 2, boneless & skinless breasts, cubed
- Small Pasta - 1/2 cup , any shape (I used Tiny Bow-ties)
- Chicken Broth - 4 cups, homemade or store bought
- Red Cabbage - 1/8th of the head , vertically sliced
- Water - 2 cups
- Salt
- Pepper - 1 tsp
- Olive Oil - 1 tbsp
- In a bowl, add the cubed chicken and sprinkle a bit of salt and pepper. Let it sit for 10 minutes.
- In a skillet, heat the oil and sear the chicken cubes. This prevents the chicken from losing moisture and getting rubbery.
- Cook the pasta as per package directions and set aside.
- Heat a soup pot with the chicken broth, water, seared chicken. Add the salt and pepper. Bring it to a boil on a medium flame for 10-12 minutes or until the chicken is cooked thoroughly.
- Add the cooked pasta plus the cut red-cabbage and cook for 5 minutes.
- Ladle the soup in the bowl and garnish with a few chopped cabbage.
Enjoy!
