Lychee, Peach and Coconut Water Elixir

Inspired by Naked Juice's "East-Meets-West" Lychee-Coconut Water juice, I set out to make a similar version at home with the addition of peaches. The Lychee is super sweet, so is the coconut water so there is no need to add sugar. A true elixir for anyone having a summer meltdown.
I
Ingredients(1 Large or 2 Small Servings:
  • 12 Lychee, peeled and stoned
  • 1 Cup Chopped Fresh/Packed Peaches (Fresh is Better as packed is too sweet)
  • 1-1/2 to 2 Cups Coconut Water
  • 1 Cup Ice Cubes/Crushed Ice
Procedure:
  • Gather all the ingredients.

  • Holding the Lychee in one hand, cut the tip off with a sharp knife. Start peeling. 
  • Cut open and remove the stone. 
  • Repeat for the remaining fruits. 
  • Add the peeled-stoned Lychee and all  the other ingredients into the blender. 
  • Blend until smooth and pour into serving glasses.Drink immediately or refrigerate. Perfect summer drink!

POM Sangria

Pomegranate juice is so good for women,is what the doctors and nutritionists say. But it is so bitter, especially when consuming it as juice (Think POM juice). So I mix it with other juices and make my version of Sangria. This has become one of my favorite drinks. Since Spring anyway!
Ingredients(For 3-4 Servings):
  • 2 Cups Pure Pomegranate Juice "POM Juice"
  • 2 Cups Pure Pulp-free Orange Juice, like Tropicana or Minute Maid
  • 1 Cup Berry Wine, like Arbor Mist Pinot Noir
  • 1/4 Cup Simple Syrup (Made with equal parts water and sugar)
  • Ice Cubes
  • Sliced Fruit Wedges, use any on hand like Apples, Lemon, Orange, Peaches, Berries
Procedure:
  • Gather the ingredients needed for making the Sangria.
  • Slice the fruits and divide them amongst the serving jars. I always save the Jelly Jars once they are emptied. They come in handy when you want to make shakes, mocktails and such.
  • Mix the juices, wine and simple syrup. Divide using measuring cup and pour into the jars. Lid the jars and refrigerate overnight.This is a must. Don't skip
  • The following day, top it with ice cubes and it is ready to be served. The best part is eating all those juice soaked fruits. Umm, refreshing!

Spinach, Avocado And Banana Smoothie "Leprechaun Smoothie"

Beginning this week I will be posting colored foods mostly focusing on smoothie/beverage/juice etc etc but not restricting to that alone. I know I have been silent for a week. I just wanted to take it easy because this year the seasonal allergy was at its worst.It started right on the day I went to DC to gaze on the Cherry Blossoms. 

For the most part I decided to suffer through it because I didn't want my body to be so dependent on Claritin. The nose and eyes were put to a test and I did give in a week later because it was affecting my concentration at work and cognitive skills in general.So I didn't cook much too cause my nose was always looking for any trigger to make me sneeze million times a minutes.

Ingredients (For 1 Serving):
  • 2 Cups Spinach, loosely packed, cleaned in several changes of cold water
  • 1 Frozen "Chiquita" Banana
  • 1 Cup  Cold  Skimmed Milk
  • 1/2 Ripe Hass Avocado
  • 2 Tsp or less/more Wildflower Honey 
Procedure:
  • Slice the banana and avocado. Add it to the blender along with the cleaned spinach.
  • Measure a cup of cold skimmed milk.Add it to the blender and blend until smooth.
  • The above ingredients yield 2 cups of phenomenal green smoothie that is slightly sweet and not a hint of spinach flavor in it. 
  • Add 2 tsp of wild flower honey.
  • Stir well to incorporate.
  • Smoothie is ready to be consumed.

Banana, Cocoa and Date Milkshake with Flaxseeds

BM#12: W2, Day5:  A "Bada Bing Bada Boom" Milkshake that gets you going till lunch time while keeping all the unhealthy cravings at bay. Super-yum shake that is a must try!!


For Your Ears: I was actually thinking about this song as I was making the shake. So thought I would share it..But beware this song is "slightly" risque`. But the tune is so catchy..it made me share anywayz!


Ingredients:
  • 1 "Nearly Ripe" Chiquita Banana (the one that is available all over US)
  • 5 Tunisian Dates, finely chopped
  • 1 Tbsp Bob's Red Mill Flaxseed Meal
  • 1 Tsp Cocoa Powder
  • 5-6 Tbsp Hot Water
  • 1-1/4 Cups Cold Skimmed Milk
  • Crushed Ice, as needed
Procedure:
  • Add the chopped dates and flaxseed meal to a small bowl.
  • Pour the hot water into the bowl and let it sit for about 5 minutes.
  • Slice the bananas and add to the blender along with cocoa, crushed ice, cold milk and date-flaxseed mixture.
  • Blend until the mixture is frothy.
  • Enjoy it immediately as is or with a dusting of cocoa powder on top.
