AppleSauce Halwa

BM#12Day6With all the apples I picked the last time I went apple-picking, I made some applesauce and froze it so  I can make applesauce cake, egg-less applesauce brownies and of-course applesauce halwa whenever I feel like. So here it is, another Halwa recipe for Halwa lovers like me. :)

Ingredients:
  • 2 Cups Unsweetened Store-bought  Or Home-made Apple Sauce
  • 2 Tbsp Maida Flour or Milk Powder
  • 1-1/4 Cups Store-bought Or Home-made Ghee or less/more 
  • 3 Tbsp Olive Oil 
  • 2 Cups Sugar Or More/Less
  • 1/2 Cup Water
  • 1 Tsp Almond Extract
  • A few drops food coloring
  • Handful of  Slivered Almonds and Cashews
  • Handful Candied Fruits/Sweetened Fruit Peels/ Tutti Frutti, optional
Procedure:
  • Make applesauce or use a store-bought one. Either way take 2 Cups of thick applesauce that it at room temperature.
  • Add sugar to a Kadai and melt it with 1/2 Cup Water.The sugar should completely liquefy and start bubbling.
  • Pour the applesauce into the Kadai and keep stirring "Constantly" on medium-low flame.
  • Add 2-3 drop of red food coloring all the while stirring the mixture.
  • In a separate non-stick pan, add the Olive oil and the flour making a slightly brown paste while stirring the other mixture. Its better to have a helping hand..
  • Add the paste to the Kadai and keep stirring.
  • Heat the ghee in another Kadai until it starts bubbling..pour the Ghee into the applesauce mixture. It should sizzle and bubble when poured. Keep stirring.
  • Some 30 minutes later the mixture starts thickening. Don't lose patience, continue with the stirring.
  • Fry the slivered almonds,cashews and add it to the mixture. Fruit peels could be added at this stage as well. After about 45-50 minutes of non-stop stirring the mixture reduces to a sticky consistency and starts leaving the sides of the pan. 
  • Grease a 7" or 8" dish with little ghee and transfer the halwa immediately into the plate. Cool, cut and serve.

Note:
  • The addition of nuts were amazing. I felt I should have added more since they elevated the taste of Halwa.
  • Skip the fruit peels..they didn't do much in the way of taste for the Halwa.
