Seeing plenty of curry dishes in my space? Blame it on the cold weather. I don't know about you, but home-cooked, hot and spicy curry is my answer to cope with the blustery weather. There is nothing that warms up my soul(and bones) like a steaming hot curry served on top of piping hot rice.
Having a plate of this curry brings such a feeling of contentment on me that is hard to beat! Yeah, only a few can surpass that kinda contentment - I can't really tell you what tops "my list of few" but I will let your imagination run wild. :)

Ingredients:
Serves 3-4 people.
- 4-6 Hard Boiled Eggs, Shelled
- 1 Large Red Pepper
- 4 Medium Gold Potatoes
- 3-4 Tbsp Olive Oil
- Salt as needed
- 1-1/2 Large Yellow Onions, roughly chopped
- 2 Roma Tomatoes, roughly chopped
- 3 Cloves Garlic, skins removed
- 1" Ginger, peeled and chopped
- 1 Tbsp Fennel Seeds
- 1 Tbsp Coriander Powder
- 1/4 Tsp Turmeric Powder
- 1/2 Tsp Cracked Black Pepper
- 2 Dry Red Chili
- 1-2 Tsp Chili Powder, Optional
- 1 Stalk Curry Leaf, Optional
- In a pan, warm a tbsp of oil and saute the chopped onions, curry leaves,red chilies, fennel seeds, ginger and garlic until the onions are lightly browned.
- Once the onions are browned, add the chopped tomatoes along with chili powder(if using), cracked black pepper, coriander powder, turmeric powder and saute till the tomatoes lose the raw smell.
- Spread the sauteed mixture on a plate and allow it to cool prior to grinding.
- In the same pan, add the remaining oil and add the chopped potatoes. Turn periodically for even browning.Takes about 5 minutes on a medium flame.
- Add the red pepper and saute for couple more minutes.
- Add the ground paste, little water and salt.
- Stir to incorporate. The gravy shouldn't be too runny. Lid the pan and cook for 5-8 minutes or till the potatoes are fork tender.
- Slit the hard-boiled eggs in several places with a serrated/sharp knife. This helps the curry to permeate the eggs. Add the slit eggs and cook for a couple of minutes.
- Serve on top of piping hot rice.
Serves 3-4 people.
