Eggless "Durum Wheat Atta Flour" Chocolate Chip Pancakes

BM#12W2, Day1: Life is Beautiful..Well, I find this line somehow incomplete. There is a "when" missing.. For me, Life is beautiful -
  • When I am with my little boy. 
  • When I am listening to music..Not just any music but the strains of music that has the power to tug a chord in me, irrespective of the language. (I will post a few of my favorite songs that I heard recently, one favorite song everyday for 7 days). 
  • When I am eating chocolate.. I am sure many of you will agree with me on this. :)
So to celebrate chocolate in any form, I will do doing another week of Blogging Marathon with "Chocolate Mela" as the theme. 

For this blog post its going to be Chocolate Chip Pancakes made with Durum Wheat Atta Flour. Warm Chocolate Chip Pancakes with maple syrup is sure to brighten anyone's day. :)


Random favorite song: I love to hear these kinda songs in the morning to wake me up..Listen to this song and you will want to tap your toes to the beat or rotate your hips, like the heroine in this song..

Ingredients(Makes 5-6 Medium Pancakes):
  • 1 Cup Whole Wheat Atta Flour
  • 1-1/2 Tbsp Granulated Sugar
  • 3 Tbsp Hot Water
  • 1 Tbsp Flaxseed Meal
  • 1 Tsp Vanilla Extract
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1-1/2 Cups Low-fat Buttermilk or more
  • 3 Tbsp Olive Oil
  • 1/3 Cup Nestle Toll-house Chocolate Morsels (Mini Chocolate Chips)
  • A pinch of Salt
Procedure:
  • Sift the flour, baking powder, baking soda in a wide bowl. Whisk in the salt and sugar.
  • Mix the 3 Tbsp Hot water and 1 Tbsp Flaxseed meal in a bowl and let it sit for 10 minutes or so.Add the Oil, Buttermilk. 
  • Pour the flaseed meal mix as well.
  • Mix and add 2-3 Tbsp more buttermilk if it is too thick. The batter shouldn't be overly mixed.
  • In a non-stick pan, pour a ladle-full of batter. Sprinkle with chocolate chips on top. In a non-stick pan, it may be a bit tricky to spread the batter because the batter is too thick. So don't oil the pan initially.
  • On a low flame,let it cook for 1-2 minutes. Flip and cook some more.
  • This is how the underside should look like..with melted chocolate chips.
 
  • Stack up and serve with plenty of pure maple syrup or honey. It does taste best with Maple Syrup.
