Buttermilk Belgian Waffles With Walnuts And Raspberries

Day3 of BM8: Your morning is guaranteed to be a lovely one if you wake up to this plate of Buttermilk Belgian Waffles with added nuts and berries. At our home we love breaking a few rules and have breakfast for dinner as well.How about you?
A few trip photos: Boating in the Underground Lake at Howe Caverns, NY: These caverns are not as impressive as the Luray Caverns(the large and most celebrated cave in East Coast) but it has something that Luray doesn't have. 1.An underground lake where they take you boating and 2.the Winding Way. Warning: This Winding Way is not for claustrophobic people! It really is a tight space. For the adventurous lot: They have a tour package that include crawling into tight spots. Boating in the Underground Lake: Its really cold. A light jacket is a must!
The Winding Way @ Howe Caverns (Considered an outstanding example of water’s erosive power, the Winding Way is a fantastic series of curves and corners that winds for almost 560 feet through solid limestone. The passageway ranges from 3-6-feet wide and from 10-17-feet high.)
The Ceiling of the Winding Way: Looks so foreboding- Like an alien creature is going to come down to devour you, doesn't it? I have seen the movie "The Descent" and "The Cave". So I couldn't help but think along those lines when I was there.
Ingredients(For 4 Belgian Waffles):
  • 2 Cups All-Purpose Flour
  • 3 Tbsp Granulated Sugar
  • 2 Tbsp Honey
  • 1/4 Cup Walnuts, toasted and roughly chopped
  • 1/4 Cup Raspberries
  • 2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Cup Buttermilk
  • 2 Eggs
  • 3 Tbsp Vegetable Oil
For the Topping:
  • Fresh Berries and Cut Bananas
  • Generous amounts of good quality Honey or Pure Maple Syrup.
Procedure:
  • Combine the Flour, baking powder, baking soda and salt in a wide shallow bowl.
  • Whisk the eggs, milk, oil and honey in another bowl.
  • Combine the wet and dry ingredients. Add the chopped walnuts and mix.
  • Throw in the raspberries and gently fold. Let the batter rest for 10 minutes.
  • Meanwhile prepare fresh fruit topping of choice. I prefer summer berries and banana.
  • Preheat the Waffle-maker and add 1 Cup of the batter right in the middle. Follow the directions of your waffle maker.I cooked mine for 3-3.5 minutes.
  • A good indication that the waffle is cooked is when the steam stops coming from the sides. Gently lift the waffles and move it to a plate.
  • Quarter the Waffles and enjoy it warm with maple syrup/honey and some fresh fruits.

  7. Absolutely love those waffles, I got to buy a waffle maker too as my kids love waffles and right now we buy those frozen costco brand which let me tell you come in very handy as sometimes they would want a waffle for snack as well :)

  12. Absolutely love those pictures! very inviting and tempting CL..yes we don't actually have a thick and fast rule abt items for breakfast or dinner..:)..it's actually a fun thing when you suddenly plan your dinner with your regular bf dishes right..
