Spinach and Hyacinth/Broad Beans "Curry In a Hurry"

Today's dishes are simple curry that can do double duty as an excellent side for Roti or an excellent topper for steamed rice. Nothing but simplicity itself!One recipe works for both!
Ingredients:
  • Grated Coconut - 1/2 cup
  • Split Pigeon-peas(Tuvar Dhal) - 1/2 cup, cooked with little turmeric powder (optional)
  • Onion - 1, medium, diced
  • Cumin seeds - 1 tsp
  • Curry Leaves - 2 stalks,chopped
  • Dry red chilli - 3
  • Garlic - 2 cloves, fine diced
  • Split Black Gram(Urad Dhal) - 1/2 tsp
  • Mustard Seeds - 1/2 tsp
  • Choice of green(Spinach) or Vegetable(Broad Beans) - Cleaned and finely chopped
  • Olive Oil - 2 tbsp
Procedure:
  • In a saute pan, heat the oil, saute the urad dhal and mustard seeds. When the mustard seeds start spluttering, add the garlic cloves, onions, cumin and red chilli.
  • Saute until the onions are translucent.Add salt and curry leaves.Stir.
  • Add the choice of green or vegetable. If it is Spinach, cook for 4 minutes. If using Broad beans,cook with lid for 10-15 minutes.
  • Check for taste and switch off stove. 
  • Add the cooked pigeon peas(if using) and grated coconut.The Spinach curry in the picture has both coconut and peas. The Broad beans curry just has coconut. Either way it tastes good!

  15. Looks lovely. Waffle iron is not really expensive. I bought mine for 14 bucks in sears. I have seen very nice waffle irons for 5 bucks in thrift stores. Just an FYI in case you might want to buy. They work out great for me since I freeze and use it on week days for my kids' breakfast.

  24. Here I am again pasting my reply to your question on Mango Bread. you can get vital wheat gluten from wholefoods, trader joes, even some walmart super center carries them. If you use all bread flour, you don't need this. You have to add it to increase gluten in whole wheat flour. It'll be in the baking isle usually next to where they keep yeast. The only difference between the active yeast and the quick yeast is quick or bread machine yeast does not require proofing. (Put in the water and let it froth). So, you should be able to use same amount of what you have but you'll have to proof it before you mix in the flour. I usually give that as a step to avoid confusion. This applies only if your yeast is a powder and not a bar. If it is a bar, it should be in the refrigerator and you can see how many equal to 1 tsp of instant yeast on the package. Hope this helps.
